Nawroze is the name of persian New Year, which is also celebrated by the Parsi community across the world. This is easy to make and delicious to eat, a unique cake recipe. It is actually one layer cake and is very moist and dense.

                                              

Ingredients :

Butter  3/4 cup
Sugar  1 1/2 cup
Eggs  2
Vanilla Essence  1 tsp
Almond extract  1 1/2 tsp
Flour  1 1/2 cup

Topping :

Sugar  1 Tbs
Mixed Dry Fruit ( Haft Mewa)  3/4 cup

Note :  Haft Mewa means " seven dry fruits" : Raisin, Almond , Walnut, Pistachio, Hazelnut,
Prune ( dry fruit of Apricot), Sanjed ( the dried fruit of the Oleaster tree)

Procedure :

Preheat the oven to 360 degree. Melt butter. Pour melted butter in a bowl and stir in sugar. Add eggs and beat well till creamy. Add all other ingredients except "Topping Ingredients".

Grease a 9 inch pan. Pour the batter into the pan. Spread mixed dry fruit over the
top and sprinkle the sugar. Bake for 40 minutes.

 Note : This recipe doesn't have baking powder or baking soda so you will get a heavier textured cake.
